- 16 oz feta, sliced
- 2 tomatoes, sliced
- 2 roasted red bell peppers, chopped
- 1/4 tsp. oregano or summer savory
- 2 eggs
- 2 hot peppers
Take two small earthenware pots with lids and put a layer of cheese, then a layer of peppers and tomatoes, mixing spice in between. Repeat until the pot is full or all ingredients are used. Bake at 375-400F for about 20-30 minutes or until the cheese is melted.
Then break an egg on top of each dish and cook till the egg is the consistency you like. Garnish with hot peppers.
