This is a recipe for leftover turkey carcass stock.
Please don’t throw out the best part of the turkey, the carcass. To some this is not a very appetizing thought but the results are so flavorful and healthy. When you are done, simply freeze the stock in portions which can be used in your everyday recipes latter on throughout the winter. Remember that this stock is very flavorful and will go a long way.
Prep Time: 20 minutes
Cook Time: 3-4 hours (the longer the better, even up to 48 hours for best results)
Ingredients
- 1 leftover turkey carcass
- water to cover carcass
- 2 carrots
- 2 celery stalks
- 1 onion
Put turkey carcass in a large soup pot. Break the carcass if needed. Cover with water. Add vegetables which have been coarsely chopped. Cover pot and slowly bring to a simmer. Reduce heat to low and skim off any foam from surface.with a spoon. Continue cooking for 3 hours and then turn stove off and let cool for another hour. Now remove carcass and vegetables. Strain stock and you are done. Now you can freeze it or use right away.
Fun Fact: Turkey carcass stock is considered a “superfood” because of the numerous health benefits.
