Ingredients

  • 6 medium potatoes
  • 1/2 small red onion, thinly sliced
  • ⅓ cup olive oil
  • ¼ cup vinegar of choice
  • 1 tbsp chopped dill
  • 1 tbsp chopped parsley
  • salt to taste (can add pepper to taste although not a traditional ingredient)

Preparation

After potatoes have been boiled, dice into small cubes.  Add to mixing bowl along with oil, vinegar, and then dill.  Mix in salt to taste.  Serve cold.
