Made some yummy kartalatsi. The key is a super hot pan and lots of oil. All you need is:
• 4 eggs, divided
• ¾ cup lukewarm water
• 2 cup all-purpose flour
• 2 cups feta cheese
• pinch of salt
• oil frying
In mixing bowl, add flour, sprinkle on salt and mix in 2 eggs and water. Knead until a soft dough is formed. Separate into 4 parts. Mix in a separate, smaller bowl the remaining 2 eggs with the feta. Roll the dough out and cut into squares. In the middle of each square put feta cheese then fold like an envelope and press the edges closed with a fork. Fry until golden brown.
