Ingredients:

  • 1 lamb shoulder
  • 1 bunch of fresh green onions
  • 5 sprigs of fresh spearmint
  • 1 tsp sea salt
  • 1 tsp sweet paprika
  • 1/2 tsp black pepper
  • 1/2 cup warm water

Instructions:

Wash the lamb shoulder well, then rub salt into meat thoroughly. Add the paprika and black pepper, also rubbing them in carefully. Let the meat rest for about 15 minutes so it can absorb the spices.

Wash and finely chop the green onions and spearmint. Place the lamb in a suitable baking dish, pour in the warm water, and add the onions and spearmint.

Put the dish in a preheated oven at 400°F for around 15 minutes, until the meat develops a light crust. Then remove it, cover tightly with aluminum foil, and bake for about 3 hours at 350°F. After the second hour, it’s a good idea to check if there is enough liquid and whether the meat is already done.
