Ingredients
- 6 medium potatoes
- 1/2 small red onion, thinly sliced
- ⅓ cup olive oil
- ¼ cup vinegar of choice
- 1 tbsp chopped dill
- 1 tbsp chopped parsley
- salt to taste (can add pepper to taste although not a traditional ingredient)
Preparation
After potatoes have been boiled, dice into small cubes. Add to mixing bowl along with oil, vinegar, and then dill. Mix in salt to taste. Serve cold.
