• 1 cup bulgur
  • 1 cup boiling water
  • zest of one lemon
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tsp garlic paste
  • 1 cup chopped parsley
  • 1/2 cup sliced green onions
  • 2 cups diced tomatoes
  • 1 1/2 cup diced cucumbers
  • salt and paprika to taste


Put bulgur into a large bowl. Add boiling water, stir, and let sit until all the water is absorbed for about 1 hour.
While bulgur soaks make the dressing by putting lemon zest, lemon juice, garlic and oil  into small bowl and whisk together. Add to bulgur that has absorbed all the water.  Then mix in parsley, onions, cucumbers and tomatoes.  Follow with salt and paprika to taste.    Serve fresh or chili for a bit prior to serving.
