• 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • 1 1/2 cups granulated sugar
  • 1/4 cup kefir
  • 3 tbsp honey
  • 1 tbsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 3 cups all-purpose flour
  • 1 1/2 tsp salt
  • 1 tbsp maca root powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp baking soda
  • 1/2 tsp baking powder
    3½ cups coarsely grated zucchini
  • 1 cup walnuts (optional)

Directions:

Put all ingredients in mixer, wet first and mix together for about 5 minutes.  Put in lined muffin tins.  Bake for about 25 min. at 350F.  Makes 24 muffins.
