St. George’s Day is celebrated on May 6th in Bulgaria. And the traditional meal would be lamb. This is a great recipe to consider this year.
- 1 (3lb) lamb roast
- 3 lb cubed potatoes
- 1 lb baby carrots
- 4-6 tbsp minced garlic
- 1 tbsp freshly chopped rosemary
- 2 tsp freshly chopped thyme leaves
- 3 tbsp extra-virgin olive oil, divided
- salt and ground black pepper to taste
In a small bowl, mix together garlic, rosemary, thyme, and 1 tablespoon olive oil and season generously with salt and pepper. Rub over lamb. In a large roasting pan, toss potatoes and carrots with remaining olive oil and season with more salt and pepper. Place lamb on top of vegetables and roast on bottom oven rack on 450F until the internal temperature is 145F, about 1 hour. Let rest, then slice and serve.
