Zucchini Patties or Bulgarian Zucchini Kufteta

Ingredients:

  • 2 cups zucchini
  • 1 cup plain yogurt
  • 1 egg
  • 1 tsp fresh chopped dill
  • 1 tsp fresh chopped parsley
  • 1 tsp paprika
  • 3/4 cup all-purpose flour
  • 2 tbsp oil
  • salt to taste

Preparation:

In a large mixing bowl slightly beat egg. Then add in zucchini and yogurt, then spices, salt and herbs and finally flour. Take a spoonful of batter and form into a patty. Then fry both sides until golden brown.
